Sometimes there are those nights when all you want it something quick and easy, yet still good for you and great tasting. This is where my Thai Noodle Soup comes in handy. My mum originally found the recipe online somewhere but we have adapted it to suit our own tastes. That's what is so great about cooking - you can change it up and make it fit your personality.
Recipe
1 Teaspoon of oil for frying
1 Clove of garlic - Chopped finely
1 Chilli - Deseeded and chopped finely
1 Small piece of ginger - Peeled and chopped finely
3 Tablespoons of brown sugar
2 Teaspoons of sesame oil
3 Teaspoons of Light Soy Sauce
2 pints of Chicken Stock
Handful of sesame seeds
1 Turkey breast chopped into thin strips (add more turkey or chicken if required)
Vegetables of your choice - such as peppers, sweetcorn
1 Nest of noodles - we like to use vermicelli but use the noodles of your choice
Salt, Pepper and Honey to taste
To begin this easy soup just place a teaspoon of oil in your saucepan of choice and add your chopped garlic, chilli and ginger. Fry it off on a medium to high heat for a few minutes and then add your chopped meat of choice.
After a few minutes add two cups of the stock into the saucepan and bring the mixture to the boil. Meanwhile in separate bowl mix the brown sugar, soy sauce, sesame oil and sesame seeds together. Add this to the mixture along with the rest of the stock.
At this point season your soup with the salt, pepper and add a teaspoon of honey to sweeten the mixture. Place the lid on the saucepan and let it simmer away so that the flavours combine and become delicious.
In another bowl prepare your noodles - we like to cover ours with boiling water which cooks them through and takes a few minutes. Once the soup is ready and is seasoned to your liking place the noodles in the bottom of the bowl and ladle the soup over the top.

There we have it in a few simple steps and with a few simple ingredients you can have a delicious, healthy and warming dish that you can tuck into for lunch or dinner with a nice piece of toasted bread or even crackers.
