Something Yummy For Your Tummy

I have always enjoyed eating delicious food and I find it comforting when the dishes that I choose to eat are home cooked and with fresh ingredients and a little bit of love.


I have always loved rice dishes, especially comforting one pot meals such as risotto. The only problem that I have with risotto is that takes an especially long time to cook on the hob with the traditional stirring method. This was when the idea of an oven cooked risotto seemed much more appealing. After trying out a recipe from a cookery magazine I have adapted it to suit myself - this is where the beauty is - adaptability.


Oven Cooked Risotto


Ingredients
(Really you can choose any vegetables that you wish but these are the ones which I particularly enjoy. The ingredients can be increased for the amount of people you are feeding. This recipe usually feeds 2 people.)

1 x Small-Medium White Onion
1 x Bell Pepper (colour optional)
1 x Leek
1/2 packet of Arborio Rice
1 x Sausage
1 x Slice of Bacon
1 x Chicken Breast
1 litre of Chicken Stock
Handful of Chorizo slices
Tablespoon of oil for frying
Pinch of salt & pepper
Spoonful of cream/creme fraiche/cream cheese to stir in at the end

Method

1. Pre-heat oven to 180°C


2. Chop onion, pepper, leek, sausage, chicken, chorizo, bacon and fry off with the spoonful of oil on a medium heat. 


3. Fry until the onions have softened and the meat has browned slightly. Add the salt and pepper to season.



4. Once the vegetables and meat have browned off add the arborio rice. Mix through and fry off gently.





5. Make your chicken stock at this point. Whilst the stock cube is dissolving add the mixture from the pot to a deep casserole dish with a lid.



6. Add the stock (see above) place the lid on the dish and add to your oven for about an hour.

7. Take the dish out during the hour and stir if it require more liquid then add small amounts of stock until the rice is soft and the dish is creamy in consistency,

8. To serve stir through the cream/creme fraiche/cream cheese.


I hope that you try this recipe out and adapt it to suit your tastes. I have made this dish with meat and without meat and both taste delicious.

Fast but homemade food is what makes eating so enjoyable.
